vanilla texas muffins with honey & vanilla drizzle

These drool-worthy ‘Vanilla Texas Muffins with Honey & Vanilla Drizzle’ are a perfect snack for anytime of the day *wink*
​Super easy, and super dreamy, these muffins are made using our Vanilla Bean Greek yoghurt.


Alrighty, you’ll need…

  • 1 ½ cups almond meal
  • ⅓ cup coconut flour
  • ¼ cup cornstarch
  • ⅛ cup rice flour
  • ½ tsp xanthan gum
  • 1 ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ⅔ cup sugar of choice
  • 1 egg + 1 egg white
  • ⅛ tsp cream of tartar
  • ½ cup The Collective Greek Yoghurt – Vanilla
  • ¼ cup milk
  • 1 ½ tsp vanilla essence
  • 1 tsp apple cider vinegar


Vanilla Honey Drizzle

  • ½ cup The Collective Greek Yoghurt – Vanilla
  • 2 tbsp honey


Now you just need to…

  1. Preheat oven to 180°C. Lightly grease a 6-hole Texas muffin tin.
  2. In a large bowl, combine all dry ingredients. Cream sugar, egg and cream of tartar for 5 minutes until thickened and creamy. Add to the dry ingredients along with the yoghurt, milk, vanilla essence and vinegar. Mix only to combine.
  3. Divide batter among muffin holes and bake for 15 minutes, or until lightly browned and springy to the touch. Allow to cool for 10 minutes before gently turning out onto a cooling rack.
  4. To make the drizzle, whisk yoghurt and honey together to combine. Drizzle over the cooled muffins.
